Mom’s Christmas Biscotti Recipe

Every year my Mom makes this awesome chocolatey Hazelnut Biscotti and it comes out better than any biscotti you could buy at the store. So I thought I’d share her recipe.

Here are the Ingredients:

1 cup hazelnuts

4 ounces of semisweet or bittersweet chocolate coarsely chopped
1 cup firmly packed light brown sugar

1 ¾ cups all-purpose flour

1/3 cup unsweetened cocoa powder

1 tbsp espresso powder

1 tsp of baking soda

¼ tsp of salt

3 large eggs

1 ½ tsps pure vanilla extract

Here are the Ingredients:

1 cup hazelnuts

1 ¾ cups all-purpose flour

1/3 cup unsweetened cocoa powder

1 tbsp espresso powder

1 tsp of baking soda

¼ tsp of salt

1 ½ tsps pure vanilla extract

 

First preheat the oven to 350 degrees F. Toast hazelnuts for about 15-25 minutes until the skins peel. Then place a towel over the bowl of nuts and let them ‘steam’ for 5 minutes. Cool then chop coarsely.

Reduce oven temperature to 300 degrees F. In a food processor place the chocolate and brown sugar process until the chocolate is very fine. In a large bowl sift together the flour, cocoa powder, espresso powder, baking soda and salt. In the bowl with the mixer, beat the eggs and vanilla until combined beat until stiff dough forms. Add the nuts about halfway through mixing.

Place flour in your hands divide the dough in half. Roll each of the dough into a log ontop of a baking sheet. It should be about 10 inches long and 2 inches wide. Bake until firm (35-40 minutes) let cool for 10 minutes.

Transfer logs onto cutting board cut the dough ¾ an inch. Arrange onto their sides bake another 15 minutes. Turn slices over and bake another 15 minutes longer. Remove and let cool. Makes about 30 long biscottis :) Enjoy! Happy Holidays!
