Only three delicious ingredients for this simple meal!
4 Cups of Pasta (to save for later)
1 head of Asparagus
1/4 of an Onion
1 tbsp of Olive Oil
1 tbsp of Pesto
1 tsp of Garlic
Pasta is always an easy and simple meal to make. That’s why I wanted to make messy pasta asparagus.
Adding some green to a pasta dish makes me feel a little less guilty about indulging (Add whole wheat pasta to help). I love asparagus it gives the pasta a little more color. I cut the asparagus each twice so the slices are still long but fit into the skillet. Then add a tablespoon of olive oil to the skillet on medium heat.
Bring the pasta to a boil. Add a slice of onion to the skillet (still learning how to cut an onion, yikes)! Some salt and pepper to taste. Lastly, a very tiny teaspoon of garlic to the skillet. Drain the pasta and mix the pesto into the warm pasta.
This pesto is store bought but store bought is expensive for the tight budget. Homemade pesto post to come! Next, add the asparagus then viola! An easy simple meal for the college student in between class and work (like I was when I made this)! Good luck!
